Tantalizing salad with pine nuts, tomatoes, spring onions, olives, and vinaigrette, chilled for a delightful experience.
Ingredients:
  • 1 tablespoon white sugar
  • 40 cherry tomatoes, halved
  • 1 cup pitted and sliced green olives
  • 1 (6 ounce) can black olives, drained and sliced
  • 2 green onions, minced
  • 3 ounces pine nuts
  • 0.5 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • salt and pepper to taste
Instructions:
  • Combine cherry tomatoes, both green and black olives, and spring onion in a large bowl.
  • Toast pine nuts in a dry skillet over medium heat until golden brown, stirring frequently. Stir them into the tomato mixture.
  • Combine olive oil, red wine vinegar, sugar, and oregano in a small bowl. Season with salt and pepper to taste. Drizzle over salad, toss gently to coat. Refrigerate for 1 hour before serving.
