Craft a zesty homemade soda to tantalize your taste buds.
Ingredients:
  • 500g cherries, halved, pitted
  • 1 vanilla bean, split
  • 268.75 gm caster sugar
  • 42.00 gm lemon juice
  • 2 litres soda water, chilled
  • Ice cubes, to serve
Instructions:
  • Combine cherries, vanilla bean, sugar, lemon juice, and 1 1/4 cups cold water in a saucepan over medium-low heat. Cook and stir for 5 minutes until the sugar dissolves. Increase heat to high and bring to a boil. Reduce heat and simmer for 35 to 40 minutes until slightly thickened. Remove from heat, cool, strain into a bottle or jug, discard cherries and vanilla bean, and refrigerate covered for 30 minutes until chilled.
  • Pour a generous 2 tablespoons of fruit syrup into each glass, followed by a splash of soda water. Serve over ice for a refreshing treat.
