Delicious Japanese treat made with glutinous rice flour, coconut milk, and sugar - perfect for a sweet and chewy dessert.
Ingredients:
  • cooking spray
  • 1 pound mochiko (glutinous rice flour)
  • 2.5 cups white sugar
  • 1 teaspoon baking powder
  • 2 cups water
  • 1 (14 ounce) can coconut milk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon red food color
  • 0.25 cup potato starch, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch pan with cooking spray.
  • Combine mochiko, sugar, and baking powder in a bowl and whisk until well mixed.
  • In a medium bowl, mix together water, coconut milk, vanilla, and food coloring. Add dry ingredients and blend well. Pour the mixture into the prepared pan and cover with foil.
  • After baking in the preheated oven for 1 hour, allow to cool completely for 30 minutes to 1 hour.
  • Sprinkle potato starch over a clean surface. Flip the pan onto the prepared surface. Slice into 36 squares using a plastic knife.
