Chichinga: suya goat kebabs

"Suya, also known as Chichinga in Ghana, is a flavorful West African street food snack. It's like Ghanaian shish kebab, featuring grilled skewered meat rubbed with a delicious groundnut spice mix called tankora."
Ingredients:
  • 450 g higher-welfare boneless leg of kid goat diced
  • 1 large red onion
  • 1-2 red, green or yellow peppers (mixed colours if possible)
  • groundnut or vegetable oil
  • a few sprigs of fresh coriander
  • 125 g roasted peanuts
  • 3 cloves of garlic
  • 5cm piece of ginger
  • 1 teaspoon cayenne pepper or red chilli flakes (for extra heat)
  • 1 teaspoon smoked paprika
  • 2 tablespoons groundnut or vegetable oil
Instructions:
  • Using a pestle and mortar, coarsely grind the peanuts, setting aside a small handful for later. Transfer the nuts to a large bowl. Grate in the garlic and ginger, adding the remaining spice rub ingredients, a pinch of sea salt, and 1 teaspoon of coarse black pepper. Add the diced goat and thoroughly massage the rub into the meat. Quarter the red onion, deseed and chop the peppers, then thread everything onto skewers. Marinate in the fridge for at least 1 to 2 hours, or preferably overnight. Remove from the fridge and let sit at room temperature for a few minutes. Preheat the grill or griddle pan. Baste the meat with oil, salt, and pepper. Grill without moving for 2 minutes per side for medium-rare or 3 minutes per side for well done. Rest for 2 minutes, then sprinkle with reserved peanuts and a pinch of chili powder. Garnish with coriander leaves and serve with a fresh salad. Enjoy the explosion of summer spice flavors!
