Whip up a quick and easy chicken stir-fry in 10 minutes. Elevate the dish by serving it in Birds Nest Potatoes.
Ingredients:
  • 4 large chicken thighs, diced
  • 20.00 ml finely chopped garlic (about 2-3 cloves)
  • 4.50 gm sugar
  • 5.30 gm dark soy sauce
  • 21.00 gm light soy sauce
  • 20.00 ml Chinese rice wine or mirin
  • 20.00 ml corn flour
  • 73.60 gm vegetable oil
  • 300g snow peas, ends trimmed
  • 1 large zucchini, cut into 1cm slices then quartered
  • 48.80 gm oyster sauce
  • 150g natural cashews
  • 1 tsp sesame oil
Instructions:
  • Combine chicken with garlic, sugar, dark soy sauce, light soy sauce, and rice wine in a bowl, ensuring everything is well mixed. Marinate for 30 minutes.
  • Combine corn flour and 2 tablespoons of water in a small bowl until smooth.
  • Heat up a generous amount of vegetable oil in a smoking hot wok. Add the chicken and cook for approximately 7 minutes until perfectly done. Transfer the cooked chicken to a bowl and set aside.
  • Sauté snow peas and zucchini with a splash of water until slightly softened and vibrant green. Mix in cashews, put back the chicken, pour in oyster sauce, sesame oil, and 1/4 cup water, then toss to blend.
  • Incorporate corn flour slurry, mix until the sauce thickens and the stir fry becomes shiny. Enjoy right away with steamed rice or served in a Chinese Potato Birds Nest Basket.
