Whip up a vibrant chicken stir-fry with celery, green beans, and nuts for a fast and nutritious meal.
Ingredients:
  • 18.40 gm grapeseed oil (see note)
  • 500g chicken breast fillets, cut into strips
  • 40.00 ml Chinese black vinegar (see note)
  • 40.00 ml gluten-free tamari
  • 1-2 tsp sambal oelek, to taste (see note)
  • 10.00 gm caster sugar
  • 1 white onion, cut into thin wedges
  • 6 celery stalks, trimmed, thinly sliced on the diagonal
  • 250g green beans, topped, cut into 4cm lengths
  • 40g almond
  • 600.00 gm steamed white rice, to serve
Instructions:
  • Heat half of the oil in a hot wok or large frypan. Stir-fry the chicken in batches until golden, for about 1-2 minutes.
  • Combine vinegar, tamari, sambal, and sugar in a small bowl until sugar is dissolved. Set aside. Heat remaining oil in the wok over high heat. Stir-fry onions for 1 minute, then add celery and beans, and stir-fry for 1-2 minutes until tender.
  • Add the chicken back to the wok along with the vinegar mixture and nuts. Stir-fry for 2-3 minutes until the chicken is fully cooked and coated in the savory sauce. Enjoy with a side of rice.
