Try these irresistible home-style chicken burgers packed with hidden veggies to ensure your kids eat well.
Ingredients:
  • 500g chicken thigh fillets, trimmed, cut into 3cm pieces
  • 2 Desiree potatoes, peeled, cut into 3cm pieces
  • 1 carrot, peeled, thickly sliced
  • 1 small brown onion, roughly chopped
  • 312.50 ml fresh white breadcrumbs
  • 41.60 gm tomato sauce
  • 22.60 gm barbecue sauce
  • 18.40 gm oil
  • 6 hamburger buns, split, toasted
  • 6 green oak lettuce leaves
  • 250.00 gm purchased tomato chutney
Instructions:
  • Prepare the Kenwood mincer and activate it. Utilize the pusher to feed the chicken, potato, carrot, and onion through the tube, collecting the minced mixture in a bowl.
  • Combine breadcrumbs, tomato sauce, barbecue sauce, salt, and pepper with the mince until fully mixed. Shape the mixture into six 2cm-thick patties using wet hands. Chill on a tray, covered, in the refrigerator for 15 minutes.
  • Preheat oven to 150°C. In a non-stick frying pan over medium heat, heat oil. Cook patties in batches for 4 to 5 minutes per side, or until golden and fully cooked. Transfer to a baking tray and keep warm in the oven while cooking the rest of the patties.
  • Layer lettuce, patties, and chutney on the bottom halves of the buns. Top with the remaining bun halves and enjoy!
