Indulge in this quick and savory cheesy chicken pasta with grape tomatoes, seasoned with Italian flavors. Ready in just 35 minutes!
Ingredients:
  • 3 tablespoons olive oil
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1 lb boneless skinless chicken breasts
  • 2 1/4 cups uncooked penne pasta (8 oz)
  • 1 pint (2 cups) grape tomatoes, cut in half
  • 8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
Instructions:
  • Preheat gas or charcoal grill. Combine 1 tablespoon of oil with Italian seasoning, salt, and pepper in a small bowl. Brush both sides of the chicken with the mixture.
  • Grill the chicken over medium heat with the lid on for 12 to 15 minutes, turning it once, until the juices run clear when the thickest part is cut (reaching at least 165°F). Transfer the chicken to a cutting board and cover to keep warm.
  • While the pasta is cooking according to package directions, drain it. Toss the drained pasta and the remaining 2 tablespoons of oil in a large bowl. Slice the chicken into thin strips, then add the chicken and remaining ingredients to the pasta. Toss everything together to combine.
