Indulgent Alfredo sauce made with butter, ricotta, cream, and Parmesan, served with fettuccine and sauteed chicken.
Ingredients:
  • 1 pound fettuccini pasta
  • 1.5 cups butter, divided
  • 1 pound skinless, boneless chicken breast halves - cut into cubes
  • 2 (16 ounce) containers whole milk ricotta cheese
  • 1 pint heavy cream
  • 1 cup grated Parmesan cheese
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook fettuccini in the boiling water for 8 to 10 minutes until al dente, then drain.
  • In a large skillet over medium heat, melt 2 tablespoons of butter. Sauté the chicken until it is no longer pink and the juices run clear.
  • Combine ricotta cheese, cream, salt, Parmesan cheese, and remaining butter in a large saucepan. Cook over medium heat until well combined, for about 10 minutes. Add cooked fettuccini and chicken, stir, and heat through.
