Baked chicken elevated with savory curried apple-butter sauce and onion for a delicious twist.
Ingredients:
  • 3 tablespoons butter
  • 2 small onion, chopped
  • 2 apples - peeled, cored and finely chopped
  • 3 tablespoons all-purpose flour
  • 1 tablespoon curry powder
  • 8 skinless, boneless chicken breasts
  • 1 cup hot chicken broth
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Cook the apple and onion in butter or margarine until tender. Stir in curry powder and cook for 1 more minute. Add flour and cook for an additional minute. Pour in stock or broth and milk, then mix thoroughly.
  • Season chicken breasts liberally with salt and pepper, then arrange them in a single layer in a 9x13 inch (or larger) baking dish. Pour the flavorful sauce over the chicken breasts and bake in a preheated oven for 45 to 50 minutes, or until the chicken is fully cooked.
