Herb and mayo chicken salad with eggs - a versatile and delectable choice for a main dish or appetizer spread on crackers.
Ingredients:
  • 2 cups diced cooked chicken
  • 3 large hard-boiled eggs, diced
  • 0.5 onion, chopped
  • 1 stalk celery, diced
  • 2 tablespoons mayonnaise, or to taste
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh parsley
  • salt and cracked black pepper to taste
Instructions:
  • In a large bowl, mix together cooked chicken, eggs, onion, celery, mayonnaise, cilantro, and parsley. Season with salt and cracked black pepper to taste. Adjust the mayonnaise, salt, and pepper to your preference. Chill in the refrigerator for about 3 hours before serving.
