Chicken and lemongrass dumplings

These parcels are delicious, simple, and satisfying to create!
Ingredients:
  • 250g chicken mince
  • 1 stalk lemongrass (white part only), bruised, finely chopped
  • 2cm piece fresh ginger, finely grated
  • 2 tsp finely chopped fresh coriander leaves
  • 24.40 gm Ayam's fish sauce
  • 11.00 gm sweet chilli sauce
  • 30 (275g packet) gow gee wrappers
Instructions:
  • Combine minced meat, lemongrass, ginger, coriander, fish sauce, and sweet chili sauce in a large bowl, mixing well.
  • Lay wrappers on a flat surface. Fill each with 2 teaspoons of mince mixture on one side. Moisten edges with cold water, fold over, and seal by pleating the edges together. Arrange on a baking paper-lined tray.
  • Set up a steamer with a sheet of baking paper over gently simmering water. Steam dumplings in separate batches for 15 minutes, or until tender and fully cooked. Serve hot.
