Ingredients:
  • 9.20 gm peanut oil
  • 500g chicken mince
  • 60ml soy sauce
  • 21.00 gm lime juice
  • 3 green onions, finely chopped
  • 1 large ripe mango, cheeks removed
  • 1 iceberg lettuce
  • sweet chilli sauce, to serve
Instructions:
  • In a large non-stick frying pan, sizzle the oil over high heat. Toss in the chicken mince and sauté it for 5 minutes until it turns a lovely light golden color, breaking it up with a fork as it cooks. Pour in the soy sauce and lime juice, stirring until the chicken is fully coated. Cook for another minute, then toss in the green onions before taking it off the heat.
  • Dice the mango and gently mix it into the warm chicken blend.
  • Assemble the parcels by filling a lettuce cup with chicken filling and rolling it up. Enjoy with sweet chilli sauce.
