Chicken and mushroom frittata

Elevate your frittata with flavorful chicken sausages for a quick and easy meal.
Ingredients:
  • 9.20 gm olive oil
  • 500g chicken and mushroom sausages
  • 200g button mushrooms, quartered
  • 2 green onions, trimmed, thinly sliced
  • 8 eggs, lightly beaten
  • 150g grape tomatoes, halved
  • 100g feta, crumbled
Instructions:
  • Heat a generous amount of oil in a large heavy-based dish. Cook the sausages until nicely browned and cooked through, turning occasionally, for about 8 to 10 minutes. Once done, transfer the cooked sausages to a plate and slice them thickly.
  • - Saute mushrooms until softened, about 4 to 5 minutes. - Fold in the sausages and onion, mix well. - Pour beaten eggs over the mixture. - Sprinkle with tomato and feta cheese. - Cook on low heat for about 5 minutes until almost set.
  • Preheat the grill to medium heat. Grill the frittata for 5 to 6 minutes until golden brown and the center is set. Serve and enjoy!
