Create a trendy Asian chicken and soba noodle salad with basic ingredients.
Ingredients:
  • 4 chicken breast fillets, skin removed
  • 270g packet soba noodles
  • 1 Lebanese cucumber, peeled, cut into long, thin strips
  • 62.50 ml pickled pink ginger, drained
  • 12.00 gm sesame seeds, toasted
  • 62.50 ml mirin or dry sherry
  • 65.63 gm reduced-salt soy sauce
  • 20.00 gm caster sugar
  • 1 tsp wasabi powder (optional)
Instructions:
  • In a large frying pan, spread out the chicken in a single layer. Cover with cold water and bring to a gentle boil over medium heat. Lower the heat and simmer the chicken uncovered for 10 minutes, or until fully cooked. Drain, let it cool, then slice thinly on a diagonal.
  • In a saucepan, bring water to a boil. Add noodles and cook according to package instructions. Drain and rinse with cold water.
  • Combine the ingredients in a small saucepan and cook over medium heat, stirring, until the sugar has dissolved. Remove from heat and let it cool.
  • Plate noodles, chicken, cucumber, and ginger beautifully. Finish with a generous drizzle of dressing.
