Tasty chicken and prawn paella - a beloved family staple.
Ingredients:
  • 1 chorizo, sliced
  • 36.40 gm olive oil
  • 12 medium green prawns, peeled & deveined, tails intact
  • 4 chicken thigh fillets, cut in thick strips
  • 1 onion, sliced
  • 1 red capsicum, sliced
  • 2 cloves garlic, crushed
  • 2.50 gm smoked paprika
  • 200.00 gm medium-grain rice
  • 500ml chicken style liquid stock
  • 1 long green chilli, sliced (optional)
  • 1 tomato, chopped
  • 62.50 ml roughly chopped coriander or parsley
  • Lemon wedges, to serve
Instructions:
  • In a large non-stick frying pan with a lid, heat half of the oil on medium-high heat. Cook chorizo for 1 minute. Add prawns and cook, stirring often until golden brown. Transfer to a plate.
  • In the same pan, heat the remaining oil until sizzling. Sear the chicken for 2-3 minutes on each side until beautifully golden. Transfer the chicken to a plate and keep it warm. Stir in the onion and capsicum, cook for 1 minute. Introduce the garlic and paprika, cook for another minute. Serve and enjoy!
  • Add the rice and cook for 1 minute, stirring to coat the grains. Pour in the stock, bring to a boil, then simmer uncovered for 10-15 minutes until small tunnels form on the surface.
  • Add the prawns, chorizo, and chicken back to the pan, gently pressing them into the rice. Cover and let it simmer for another 10-15 minutes until the rice is tender. Take the pan off the heat and let it sit for 5 minutes before serving.
  • Garnish with chili, tomato, and herbs, and serve with lemon wedges.
