Chicken and Sage Dumplings

Delicious chicken and veggie dumplings made with Progresso® broth and Bisquick Heart Smart® mix – an ideal dinner choice.
Ingredients:
  • 1 1/2 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 5 1/4 cups Progresso™ reduced-sodium chicken broth (from two 32-oz cartons)
  • 2 cups water
  • 1 medium onion, chopped
  • 1 1/2 teaspoons chopped fresh sage leaves
  • 1 1/2 teaspoons chopped fresh thyme leaves
  • 1 1/4 teaspoons salt
  • 3/4 teaspoon pepper
  • 1 bag (16 oz) frozen mixed vegetables
  • 3 cups Bisquick Heart Smart® mix
  • 1 cup buttermilk
  • 1/2 teaspoon poultry seasoning
Instructions:
  • In a large Dutch oven, combine chicken, broth, water, onion, sage, thyme, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Bring to a boil over medium-high heat, then lower the heat to a simmer. Cook for 20 minutes, stirring occasionally until chicken is cooked through. Stir in frozen vegetables and bring to a boil again over medium-high heat.
  • Combine Bisquick mix, buttermilk, poultry seasoning, and 1/4 teaspoon each of salt and pepper in a medium bowl, stirring until well blended. Drop rounded teaspoonfuls of dough into the boiling mixture in a Dutch oven, ensuring they don't touch. Cook uncovered over medium-low heat for 10 minutes, stirring occasionally to prevent sticking. Cover and cook for an additional 10 minutes. Serve garnished with thyme sprigs, if desired.
