Effortless gumbo soup with tender dumplings for ultimate comfort.
Ingredients:
  • 2 teaspoons butter or margarine
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 2 cans (19 oz each) Progresso™ Traditional chicken & sausage gumbo soup
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 2 tablespoons milk
  • 1 tablespoon butter or margarine, softened
  • 1 egg
Instructions:
  • In a large nonstick skillet, melt 2 teaspoons of butter over medium-high heat. Add the chicken and cook for 5 to 6 minutes, flipping once, until beautifully browned all over. Pour the soup over the chicken and bring to a boil. Lower the heat, and push the chicken to one side of the skillet.
  • Combine cornbread mix, milk, 1 tablespoon butter, and egg in a medium bowl until thoroughly mixed. Use a spoon to drop 8 rounded tablespoonfuls of batter onto the hot soup mixture.
  • Cover and simmer gently for 18 to 22 minutes, or until a toothpick inserted in the center of the dumplings comes out clean.
