Boost veggie intake with a delicious chicken and veggie bake!
Ingredients:
  • olive oil cooking spray
  • 2 garlic cloves, chopped
  • 2 red onions, cut into thin wedges
  • 4 large roma tomatoes, chopped
  • 1 medium eggplant, cut into 1cm pieces
  • 250g flat mushrooms, stems trimmed, sliced
  • 4 (125g each) chicken breast fillets, trimmed
  • 150g baby spinach
Instructions:
  • 1. Preheat your oven to 180°C. 2. Grease an ovenproof casserole dish with oil. 3. Mix garlic, onions, tomatoes, eggplant, and mushrooms in the dish. 4. Spray the vegetables with oil and season with salt and pepper. 5. Cover the dish and bake for 20 minutes. 6. Stir the vegetables. 7. Place a baking tray on the shelf above the vegetables and heat for 3 minutes or until hot.
  • Coat chicken with oil on both sides. Take out the tray from the oven and lightly coat it with oil. Place chicken on the hot tray. Bake chicken on top of the vegetables for 12 minutes or until fully cooked. Take the chicken out of the oven, cover it, and let it rest for 5 minutes. During this time, turn off the oven but keep the vegetables inside.
  • Combine the spinach with the vegetables and spoon into bowls. Then, thickly slice the chicken, season with pepper, and serve with the vegetables.
