Chicken and Wild Rice Soup

Velvety chicken soup with rich, earthy flavors. Perfect for a cozy meal.
Ingredients:
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1 cup uncooked wild rice
  • 3/4 teaspoon salt
  • 2 cups finely diced onion
  • 1 medium carrot, peeled and finely diced (1/2 cup)
  • 1 stalk celery, finely diced (1/3 cup)
  • 1/2 lb fresh mushrooms, finely diced
  • 2 tablespoons chopped fresh thyme
  • 1/4 cup all-purpose flour
  • 2 cups water
  • 2 cups chopped deli rotisserie chicken
  • 1 cup heavy whipping cream
Instructions:
  • In a 4-quart saucepan, bring the broth, wild rice, and 1/4 teaspoon of salt to a boil over high heat. Stir well, cover, and simmer over low heat for about 45 minutes without removing the lid, until the rice is tender yet slightly firm.
  • In a large nonstick skillet, melt butter over medium-high heat. Saute onion, carrot, celery, and remaining salt for 5 to 7 minutes until vegetables start to brown. Add mushrooms and cook for an additional 3 to 5 minutes until mushrooms soften and brown. Stir in thyme and flour, cooking for 1 to 2 minutes until flour is fragrant. Pour in water and simmer for 5 minutes, stirring occasionally.
  • Combine the vegetable mixture with the wild rice mixture, then add the chicken and cream. Bring to a simmer over high heat, then reduce heat and simmer for 3 minutes to blend flavors. Serve in 6 bowls and garnish with fresh thyme, if desired.
