Spicy chillies, fragrant coriander, and simple Vietnamese dish for a quick and tasty weeknight dinner.
Ingredients:
  • 1 whole barbecued chicken, skin and bones removed, meat shredded
  • 500.00 ml finely shredded wombok (Chinese cabbage)
  • 1 red onion, halved, thinly sliced
  • 82.50 ml torn fresh mint leaves
  • 66.25 gm fresh coriander leaves dressing
  • 48.80 gm fish sauce (see note)
  • 30.00 gm caster sugar
  • 20.00 gm water
  • 21.00 gm soy sauce
  • 3 tsp rice wine vinegar
  • 1 long fresh red chilli, seeded, finely chopped
Instructions:
  • Combine fish sauce, sugar, water, soy sauce, vinegar, and chili in a small bowl and stir until the sugar is fully dissolved to make the dressing.
  • In a bowl, mix the chicken, wombok, onion, mint, and coriander. Drizzle the dressing over the salad and toss well. Serve in individual dishes.
