Ingredients:
  • 300g (1 1/2 cups) white long-grain rice
  • 40ml (2 tbsp) olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, crushed
  • 2 tsp grated fresh ginger
  • 4 chicken breasts, cut into 2cm dice
  • 1/2 tsp ground chilli
  • 2.50 gm ground cumin
  • 2 cinnamon sticks
  • 1/2 tsp ground turmeric
  • 1 tsp ground coriander
  • 6 fresh curry leaves (optional)*
  • 150ml thick plain yoghurt
  • 4.50 gm white sugar
  • 40.80 gm sultanas
  • 60.00 ml slivered almonds, toasted
  • 82.50 ml roughly chopped coriander leaves
Instructions:
  • Simmer the rice in seasoned water for 8 minutes, then strain and set it aside.
  • In a large frypan over medium heat, sizzle the onion in oil until softened. Mix in garlic, ginger, and chicken, stirring for 3 minutes. Sprinkle in spices, curry leaves, yoghurt, sugar, and sultanas. Stir for 1 minute, then simmer on low heat.
  • Top the sauce with the rice, then cover the pan with a folded tea towel and secure the lid. Cook for 10 minutes. Let it rest for another 10 minutes off the heat. Uncover, mix in nuts and half of the coriander. Stir to combine thoroughly. Sprinkle the remaining coriander on top before serving. Serve with chutney, sliced tomatoes, and onions on the side.
