Family-friendly classic Italian dish.
Ingredients:
  • 8 chicken thigh fillets
  • plain flour, for dusting
  • salt and cracked black pepper
  • 1 onion, sliced
  • 2 cloves garlic, chopped
  • 160ml chicken stock
  • 125ml white wine
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 125.00 ml kalamata olives
  • 40.00 ml oregano leaves
  • steamed vegetables, to serve
Instructions:
  • Coat chicken fillets with a flavorful mixture of flour, salt, and pepper. Heat oil in a spacious non-stick frying pan over medium-high heat, and sear chicken in batches for 2-3 minutes per side until golden. Set aside cooked chicken for later.
  • Lower the heat to medium. Sauté onions for 4 minutes until soft. Add garlic and cook for 30 seconds. Pour in stock, wine, and tomatoes, then simmer for 20 minutes. Mix in olives and oregano, and cook for 2-3 minutes. Serve with steamed vegetables.
