Family-friendly classic Italian dish.
Ingredients:
8chicken thigh fillets
plain flour, for dusting
salt and cracked black pepper
1onion, sliced
2clovesgarlic, chopped
160ml chicken stock
125ml white wine
Mutti Polpa Finely Chopped Tomatoes400g
125.00 ml kalamata olives
40.00 ml oregano leaves
steamedvegetables, to serve
Instructions:
Coat chicken fillets with a flavorful mixture of flour, salt, and pepper. Heat oil in a spacious non-stick frying pan over medium-high heat, and sear chicken in batches for 2-3 minutes per side until golden. Set aside cooked chicken for later.
Lower the heat to medium. Sauté onions for 4 minutes until soft. Add garlic and cook for 30 seconds. Pour in stock, wine, and tomatoes, then simmer for 20 minutes. Mix in olives and oregano, and cook for 2-3 minutes. Serve with steamed vegetables.
