Flavorful chicken cacciatore with garlic, capers, and red onion.
Ingredients:
60ml (1/4 cup) olive oil
1.7kg chicken thigh fillets, cut into 4cm pieces
3red onions, halved, thinly sliced
6garliccloves, finely chopped
2 x 700g btls Home Brand Chunky Pasta Sauce
500ml (2 cups) white wine
40.00 ml capers, coarsely chopped
20.00 ml dried oregano leaves
200g button mushrooms, thinly sliced
270g pkt garlic bread, warmed
Steamedgreen round beans, to serve
Salt, to season
Instructions:
In a large heavy-based saucepan, heat oil over medium-high heat. Brown chicken, onion, and garlic for 10 minutes, stirring occasionally. Season with salt and pepper. Stir in pasta sauce, wine, capers, and oregano. Simmer over medium-low heat for 40 minutes until the sauce thickens, stirring occasionally.
Add the mushroom and simmer for 5 minutes, stirring occasionally, until tender.
Plate the chicken cacciatore. Accompany with garlic bread and beans.
