Chicken Chilaquiles Casserole

Delicious twist on classic Chicken Chilaquiles made easy by layering pan-fried tortilla strips, green salsa, chicken, and cheese in a casserole dish. Baked to perfection in 45 minutes, this dish is a guaranteed crowd-pleaser!
Ingredients:
  • 1/2 cup vegetable oil
  • 1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 count), cut into 1/2-inch strips
  • 2 cups shredded cooked chicken or turkey
  • 1 1/3 cups salsa verde or green salsa
  • 2 cups shredded Chihuahua or mozzarella cheese (8 ounces)
Instructions:
  • Fry tortilla strips in hot oil for 30-60 seconds until they turn light golden brown; then remove and drain excess oil.
  • Preheat the oven to 350°F and generously grease a 2-quart casserole dish.
  • In a casserole dish, create layers starting with half of the tortilla strips, followed by the chicken, half of the salsa verde (about 2/3 cup), and 1 cup of cheese. Press down gently to compact the layers. Repeat the process with the remaining tortilla strips, sauce, and cheese.
  • Bake for approximately 30 minutes, or until the cheese is gooey and has a beautiful golden brown color.
