Coconut curry chicken with apples, raisins, and veggies served over rice.
Ingredients:
  • 6 bone-in chicken breast halves, skinless
  • 3 medium carrots, chopped
  • 3 stalks celery, chopped
  • 2 medium onions, chopped
  • 2 tablespoons ground curry powder
  • 2 tablespoons all-purpose flour
  • 1 tablespoon hot water
  • 1 (10 ounce) can coconut milk
  • 0.5 cup raisins
  • 0.5 cup apples - peeled, cored and shredded
Instructions:
  • Brown the chicken breast halves in a large skillet over medium heat. Add carrots, celery, and onions, cooking and stirring until vegetables are tender.
  • Combine curry powder and flour with hot water in a small bowl, then mix in coconut milk until a thick paste forms.
  • Combine curry powder paste, the remaining rich coconut milk, sweet raisins, and crisp apple in the skillet. Ensure the chicken is generously coated with the flavorful mixture. Cover and simmer over low heat for 30 to 45 minutes until the chicken is cooked through and the juices run clear.
