Spicy tomato baked chicken topped with cotija cheese - a quick, tasty dish!
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 (16 ounce) can tomato sauce
  • 1 (1 ounce) package taco seasoning
  • 0.5 cup shredded cotija cheese
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C, if you want to get fancy) and give a quick spritz of vegetable cooking spray to a glass baking dish.
  • Season the chicken with a pinch of salt and pepper. Sear the chicken in a hot saute pan until golden on both sides. Transfer the chicken to a baking dish. Combine tomato sauce and taco seasoning in a bowl. Pour the mixture over the chicken. Sprinkle cheeses on top evenly.
  • Bake until chicken is cooked through and cheese is golden brown, about 20-30 minutes in preheated oven.
