Spicy chicken and potato curry with a flavorful mix of mild and hot curry powder.
Ingredients:
  • 1 (3 pound) chicken, cut into pieces
  • 0.25 cup vegetable oil
  • 2 onions, chopped
  • 8 cloves garlic, chopped
  • 0.25 cup mild curry powder
  • 2 tablespoons hot curry powder
  • 1 pinch salt to taste
  • 5 russet potatoes, peeled and cut into 1-inch pieces
Instructions:
  • In a large saucepan, submerge the chicken in water and bring to a boil. Simmer over medium heat until the chicken is cooked through, approximately 20 minutes.
  • Heat vegetable oil in a large skillet until shimmering. Saute onions and garlic until tender, about 5 minutes. Add mild curry powder, hot curry powder, black pepper, and salt; cook for an additional 5 minutes. Transfer the flavorful mixture to the chicken.
  • Combine the potatoes with the flavorful chicken mixture and allow them to simmer until perfectly tender, for about 20 minutes.
