Impress with rich and savory Chicken in Sherry Cream Sauce with prosciutto, salami, and mushrooms. Perfect for entertaining and guaranteed to be a hit with everyone!
Ingredients:
  • 3 tablespoons butter
  • 1 onion, chopped
  • 8 fresh mushrooms, thinly sliced
  • 1 clove garlic, chopped
  • 0.25 pound thinly sliced prosciutto, cut into strips
  • 0.25 pound thinly sliced hard salami, cut into strips
  • 4 boneless, skinless chicken breast halves
  • 1 cup all-purpose flour
  • salt and pepper to taste
  • 0.5 cup dry sherry
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup marinara sauce
  • 1 tablespoon butter
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a large heavy skillet over medium heat, melt 3 tablespoons of butter. Cook the onion until soft and translucent. Add mushrooms, garlic, prosciutto, and salami. Lightly coat the chicken with flour. Place the chicken in the pan and season with salt and pepper. Cook for 5 minutes on each side. Pour in sherry and simmer until liquid is reduced by half. Add chicken broth, cream, and marinara sauce. Let it simmer until the sauce reaches your desired thickness. Stir in 1 tablespoon of butter and garnish with parsley before serving.
