Delicious chicken enchiladas with creamy tomato sauce and lots of cheese for an easy and satisfying Mexican meal.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 4 skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 1.75 cups shredded Cheddar cheese, divided
  • 0.5 pint sour cream
  • 1 tablespoon dried parsley
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 1 (15 ounce) can tomato sauce
  • 0.33333334326744 cup chopped green bell pepper
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 0.5 teaspoon salt
  • 8 (10 inch) flour tortillas
  • 1 (12 ounce) jar taco sauce
Instructions:
  • First, collect all the ingredients required for the recipe and then preheat the oven to 350°F (175°C).
  • In a nonstick skillet over medium heat, warm oil and cook chicken until fully cooked, about 5 to 7 minutes per side. Transfer chicken to a cutting board, slice into cubes, and add back to the skillet.
  • Combine onion, 1 cup of sharp Cheddar cheese, sour cream, fresh parsley, oregano, and black pepper in a saucepan. Cook and stir gently over low heat until the cheese is melted. Incorporate tomato sauce, green pepper, minced garlic, chili powder, and salt. If necessary, add water to achieve desired consistency.
  • Fill tortillas with savory chicken mixture, tightly roll into flavorful enchiladas, then place seam-side down in a 9x13-inch baking dish.
  • Drizzle taco sauce over the top and sprinkle with the remaining 3/4 cup of Cheddar cheese.
  • Place in the oven that has been preheated, leave uncovered, until the cheese is melted, for about 20 minutes. Allow to cool slightly before serving.
