Chicken Florentine Casserole

Chicken breasts with bacon, mozzarella, garlic cream sauce, baked on spinach and mushrooms. Deliciously savory!
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 0.25 cup butter
  • 3 teaspoons minced garlic
  • 1 tablespoon lemon juice
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 tablespoon Italian seasoning
  • 0.5 cup half-and-half
  • 0.5 cup grated Parmesan cheese
  • 2 (13.5 ounce) cans spinach, drained
  • 4 ounces fresh mushrooms, sliced
  • 0.66666668653488 cup bacon bits
  • 2 cups shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Place the chicken breasts on a baking sheet and bake for 20-30 minutes until cooked through with clear juices. Set aside.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a saucepan over medium heat, melt butter. Stir in garlic, lemon juice, cream of mushroom soup, Italian seasoning, half-and-half, and Parmesan cheese, stirring constantly.
  • Layer spinach on the bottom of a 9x9 inch baking dish. Top with mushrooms and pour half of the sauce mixture on top. Place chicken breasts in the dish and pour the rest of the sauce over them. Sprinkle bacon bits and add mozzarella cheese on top.
  • Bake at 400 degrees F (200 degrees C) for 20-25 minutes until golden brown and bubbling.
