Cozy up with a delicious one-pot chicken dish to beat the winter chill!
Ingredients:
  • 27.30 gm olive oil
  • 8 skinless chicken thigh cutlets
  • 1 medium brown onion, chopped
  • 2 garlic cloves, crushed
  • 1/4 tsp cayenne pepper
  • 3 chicken style stock cubes
  • 4 sprigs fresh thyme
  • 400g can diced tomatoes
  • 150g okra, halved (see note)
  • 200.00 gm white rice
Instructions:
  • In a large saucepan over medium-high heat, heat 1 tablespoon of oil. Brown chicken in two batches for about 3 minutes on each side. Transfer chicken to a plate.
  • In a pan, heat the rest of the oil, then add the onion. Sauté for 3 minutes until softened. Stir in the garlic and cayenne pepper, cooking for 30 seconds until fragrant.
  • Add the chicken back to the pan along with 3 cups of warm water, crumbled stock cube, thyme, and tomatoes. Bring to a boil, then reduce heat to low and simmer covered for 1 hour, or until chicken is tender.
  • Turn up the heat to medium. Add okra and rice to the pot. Season with salt and pepper. Let it simmer for 15 minutes, stirring occasionally, until okra and rice are tender. Serve and enjoy.
