Savory chicken breasts with tomato-mushroom sauce.
Ingredients:
  • 0.75 cup chicken broth
  • 1.5 tablespoons tomato paste
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon dried oregano
  • 0.125 teaspoon salt
  • 4 boneless, skinless chicken breast halves
  • 3 tablespoons dry bread crumbs
  • 2 teaspoons olive oil
  • 2 cups fresh sliced mushrooms
Instructions:
  • Combine the broth, tomato paste, black pepper, oregano, salt, and garlic in a medium bowl. Mix thoroughly and set aside.
  • Coat the chicken generously with bread crumbs. Heat oil in a large skillet over medium-high heat and sauté the chicken for 2 minutes on each side, until lightly browned.
  • Pour the reserved broth mixture and mushrooms into the skillet, bringing it to a boil. Cover the skillet, lower the heat, and let it simmer for 20 minutes. Set the chicken aside, keeping it warm by covering it.
  • Bring the broth mixture to a vigorous boil and simmer for 4 minutes, or until it reaches your preferred thickness. Drizzle the sauce over the chicken and plate to serve.
