Elevate fried chicken with basil-Parmesan sauce for a gourmet twist.
Ingredients:
  • 0.25 cup milk
  • 0.25 cup dried bread crumbs
  • 4 skinless, boneless chicken breasts
  • 3 tablespoons butter
  • 0.5 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 (4 ounce) jar sliced pimento peppers, drained
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh basil
  • 0.125 teaspoon ground black pepper
Instructions:
  • Set up a dredging station by placing milk in one shallow bowl and bread crumbs in another. Heat butter or margarine in a skillet over medium heat. Dip chicken in milk, then coat with crumbs. Cook chicken in the skillet with butter or margarine until juices run clear, about 10 minutes. Keep warm before serving.
  • Pour the broth into the skillet and bring it to a gentle boil over medium heat, scraping the delicious browned bits from the pan. Stir in the cream and pimentos, allowing it to boil and stirring continuously for 1 minute. Lower the heat.
  • Combine Parmesan cheese, fresh basil, and a pinch of freshly ground black pepper. Stir the sauce continuously until it is heated through. Pour the flavorful mixture over the succulent chicken and savor every bite!
