Chicken in Olive-Wine Sauce

30-minute olive-wine chicken: A hearty and delightful dinner choice.
Ingredients:
  • 2 slices bacon, cut into 1-inch pieces
  • 1 medium onion, chopped (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh or 1 teaspoon dried rosemary leaves, crumbled
  • 4 boneless skinless chicken breast halves (about 1 1/4 lb)
  • 1/3 cup pimiento-stuffed olives
  • 1/2 cup dry red wine or chicken broth
  • 3/4 cup seasoned croutons
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a 10-inch skillet over medium-high heat, sauté bacon, onion, garlic, and rosemary for about 8 minutes until the bacon is crisp. Use a slotted spoon to remove the bacon and set it aside.
  • Place the chicken in a skillet over medium heat. Sear for about 5 minutes, turning occasionally, until the chicken develops a golden brown color. Then, add in the olives, wine, and bacon. Cover and simmer for approximately 12 minutes, or until the chicken is fully cooked through and no longer pink in the center.
  • Transfer the chicken mixture onto a serving platter and generously sprinkle over with croutons and freshly chopped parsley for added texture and flavor.
