Authentic and flavorful Chicken Laksa recipe.
Ingredients:
  • 250g dried rice vermicelli noodles
  • 125.00 ml laksa paste (see tip)
  • 400ml can coconut milk
  • 510.00 gm chicken stock
  • 1/2 large barbecued chicken, skin and bones removed, meat shredded
  • 150g snow peas, trimmed, thinly sliced
  • Bean sprouts, optional, to serve
Instructions:
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Let them stand for 5 minutes or until tender. Then, using a fork, gently separate the noodles before draining them.
  • Begin by warming a wok or large saucepan over medium heat. Add the fragrant laksa paste and stir-fry for 1 minute. Pour in the coconut milk and stock and bring to a boil. Then, introduce the chicken and snow peas to the mixture, lowering the heat to simmer gently for 2 to 3 minutes until the snow peas are tender and vibrant green.
  • Distribute noodles evenly among bowls. Drizzle with coconut milk mixture. Sprinkle with beansprouts. Serve.
