Chicken Matzo Ball Soup

Versatile and cozy soup for every season.
Ingredients:
  • 2 eggs, lightly beaten
  • 2 tablespoons melted butter or margarine
  • 0.5 cup matzo meal
  • 1 teaspoon chopped fresh flat-leaf parsley
  • 1 dash white pepper
  • 1 tablespoon water
  • 6 cups chicken broth
  • 1 medium carrot, cut into 2 inch julienne strips
Instructions:
  • Combine eggs and melted butter in a small bowl. Add matzo meal, parsley, salt, pepper, and water, stirring until a soft dough forms. Chill covered in the refrigerator for at least 30 minutes before proceeding.
  • In a large pot, bring chicken broth and carrots to a boil. Reduce heat to a simmer. Shape matzo dough into 12 balls, dipping hands in cold water for easier handling. Drop the matzo balls into the simmering broth, cover, and cook for 30 to 40 minutes.
