Chicken meatball laksa

Brighten up your week with a delicious laksa bursting with flavor.
Ingredients:
  • 500g chicken mince
  • 1 egg, lightly beaten
  • 187.50 ml fresh breadcrumbs
  • 2 green onions, finely chopped
  • 1 garlic clove, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 20.00 ml finely chopped fresh coriander leaves, plus extra sprigs to serve
  • 440g packet shelf-fresh thin hokkien noodles
  • 18.40 gm vegetable oil
  • 185g jar laksa paste
  • 637.50 gm chicken style liquid stock
  • 400ml can coconut milk
  • 300g head broccoli, cut into small florets
  • 200g snow peas, trimmed
  • 1 bunch baby pak choy, trimmed, leaves separated
  • 200g packet fried tofu
  • 250.00 ml bean sprouts, trimmed
  • Thinly sliced green onion, to serve
  • Sliced long red chilli, to serve
  • Lime wedges, to serve
Instructions:
  • Mix together the mince, egg, breadcrumbs, onion, garlic, ginger, and coriander in a bowl. Shape level tablespoons of the mixture into balls using damp hands and place them on a plate. Chill in the refrigerator for 20 minutes.
  • Cook the hokkien noodles according to the instructions on the packet.
  • Preheat a wok over medium-high heat. Add oil and swirl to coat. Cook meatballs in two batches, turning occasionally, until golden brown all over, about 2 to 3 minutes. Transfer to a plate. Add paste to the wok and cook, stirring, until fragrant, about 1 to 2 minutes. Stir in stock and coconut milk and bring to a simmer.
  • Place the meatballs back in the pan and lower the heat, simmer for 10 minutes until meatballs are fully cooked. Stir in broccoli, snow peas, and pak choy, cook for an additional 2 to 3 minutes until vegetables are tender. Finish by adding fish sauce and tofu, gently stir to combine.
  • Portion noodles into individual serving bowls. Drizzle with flavorful laksa broth. Garnish generously with crunchy bean sprouts. Finish by sprinkling with green onion, spicy chili, and fresh coriander. Serve alongside zesty lime wedges for a burst of citrus flavor.
