Try these delicious and simple tacos for a satisfying meal everyone will love.
Ingredients:
  • 500g Australian Chicken Breast Mince
  • 40g pkt Mexican seasoning
  • 250g pkt tortilla chips
  • 120g cheddar cheese
  • 350g mixed tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • 1. Preheat oven to 200°C and line 2 baking trays with parchment paper. 2. Heat oil in a medium frying pan over medium heat. 3. Cook the mince, breaking up lumps with a wooden spoon, for 5 minutes until cooked through. 4. Stir in Mexican seasoning and 1/3 cup (80ml) water, and cook for 3 minutes until mixture thickens.
  • Spread the tortilla chips out in a single layer on the trays. Evenly sprinkle with the cheddar cheese. Bake for 5 minutes, or until the cheese is melted to perfection.
  • Distribute tortilla chips into individual serving bowls. Layer with mince, tomato, onion, and avocado. Season to taste before serving.
