"Hearty chicken noodle soup packed with veggies and noodles, ideal for a comforting work lunch."
Ingredients:
  • 750mls (3 cups) water
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 75g (1/2 cup) dried macaroni pasta
  • 1-2 (about 150g) celery sticks, diced
  • 1 (about 150g) small carrot, peeled, diced
  • 1 corn cob, kernels cut from cob
  • 150g broccoli, cut into small florets
  • 20.00 ml chopped fresh continental parsley leaves
Instructions:
  • In a medium saucepan, bring water and chicken stock to a high boil. Add pasta and cook for 3 minutes.
  • Toss in celery, carrot, and corn. Bring to a boil, then simmer on medium heat for 4 minutes. Mix in broccoli and cook for another 4 minutes until all veggies are tender. Finish by folding in fresh parsley.
  • Pour the soup into a thermos, and remember to pack a spoon.
