Sweet corn enhances classic chicken noodle soup.
Ingredients:
1barbecued chicken
4green onions, finely sliced
500.00 ml chicken consomme
510.00 gm chicken style liquid stock
175g fresh Singapore noodles, chopped
420g can sweet corn kernels, drained
42.00 gm soy sauce
Instructions:
Separate the skin and meat from the chicken carcass, discard the skin and bones. Finely slice or shred the meat and refrigerate until needed.
In a large saucepan over medium heat, sauté green onions in oil until tender, about 1 to 2 minutes. Stir in consomme and stock, and bring to a boil.
Lower the heat to a gentle simmer and gently introduce the noodles into the pot. Allow them to cook for 2 to 3 minutes until they reach the desired tenderness.
Combine corn kernels, chicken, and soy sauce and stir until everything is well mixed. Cook for 2 minutes or until the chicken and corn are heated through. Enjoy with dinner rolls.
