Sweet corn enhances classic chicken noodle soup.
Ingredients:
  • 1 barbecued chicken
  • 4 green onions, finely sliced
  • 500.00 ml chicken consomme
  • 510.00 gm chicken style liquid stock
  • 175g fresh Singapore noodles, chopped
  • 420g can sweet corn kernels, drained
  • 42.00 gm soy sauce
Instructions:
  • Separate the skin and meat from the chicken carcass, discard the skin and bones. Finely slice or shred the meat and refrigerate until needed.
  • In a large saucepan over medium heat, sauté green onions in oil until tender, about 1 to 2 minutes. Stir in consomme and stock, and bring to a boil.
  • Lower the heat to a gentle simmer and gently introduce the noodles into the pot. Allow them to cook for 2 to 3 minutes until they reach the desired tenderness.
  • Combine corn kernels, chicken, and soy sauce and stir until everything is well mixed. Cook for 2 minutes or until the chicken and corn are heated through. Enjoy with dinner rolls.
