Transform leftover chicken into a savory and comforting chicken noodle soup in no time.
Ingredients:
  • 1 tablespoon olive oil
  • 0.25 cup diced onion
  • 0.25 cup diced carrot
  • 0.25 cup diced celery
  • 0.25 cup diced green bell pepper
  • 1 teaspoon minced garlic
  • 1 cup chopped cooked chicken
  • 1 tablespoon parsley flakes
  • 0.5 cup quinoa
  • salt and ground black pepper to taste
Instructions:
  • In a saucepan over medium heat, sauté onion, carrot, celery, bell pepper, and garlic in olive oil until vegetables are tender, about 5-7 minutes.
  • Combine chicken and freshly chopped parsley into the vegetable mix, sauté for 1 minute. Mix in quinoa, lower heat to medium-low, and toast for about 2 minutes.
  • Pour the chicken broth over the quinoa mixture and bring it to a boil. Reduce heat and simmer with a lid on for about 15 minutes until the quinoa is tender. Let it sit covered for another 5 minutes off the heat, then season with salt and pepper. Fluff with a fork before serving.
