Satisfying chicken ramen with homemade honey Sriracha crackers for a flavorful crunch.
Ingredients:
  • 2 tablespoons olive oil
  • 0.75 cup thinly sliced carrot
  • 0.75 cup sliced celery
  • 0.75 cup chopped onion
  • 1 teaspoon grated fresh ginger
  • 4 cups low-sodium chicken broth
  • 1 tablespoon reduced-sodium soy sauce
  • 2 teaspoons chopped fresh basil
  • 2 teaspoons chopped fresh oregano
  • 0.25 teaspoon ground black pepper
  • 2 cups cubed cooked chicken
  • 2 (3 ounce) packages ramen noodles with seasoning packet
  • 1 tablespoon lime juice
  • 0.25 teaspoon lime zest, or to taste
  • 2 tablespoons canola oil
  • 2 tablespoons honey
  • 2 tablespoons Sriracha sauce
  • 9 ounces oyster crackers
Instructions:
  • In a Dutch oven over medium heat, warm oil before adding carrot, celery, and onion. Sauté until crisp-tender, around 5 minutes. Stir in ginger and garlic. Cook for an additional 1 minute. Pour in broth, soy sauce, basil, oregano, and pepper and bring to a boil. Lower the heat, cover, and simmer until carrots are just tender, about 5 minutes.
  • Combine honey and sriracha in a bowl and mix well. Brush the mixture on crackers and bake until crispy, about 10 minutes. Serve with the soup.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a 10x15-inch baking pan with foil.
  • In a large saucepan over medium heat, melt butter in canola oil (1 to 2 minutes). Whisk in honey, Sriracha, and 1 1/2 teaspoons of reserved ramen seasoning. Bring to a boil, then remove from heat. Stir in oyster crackers until coated evenly.
  • Spread the crackers into an even layer on the prepared pan.
  • Bake in the preheated oven until light golden and crisp, stirring once, 8 to 10 minutes. Let cool completely to allow the crackers to continue crisping. Store in an airtight container at room temperature for up to 2 weeks.
