Ingredients:
  • 6 medium egg tomatoes, finely chopped
  • 1 tsp chicken style stock powder
  • 1 garlic clove, crushed
  • 60ml (1/4 cup) water
  • 80ml (1/3 cup) light cream
  • 20.00 ml chopped fresh rosemary
  • 300g chicken mince
  • 2 green shallots, ends trimmed, finely chopped
  • 45g (1/4 cup) walnuts, finely chopped
  • 1 x 290g pkt wonton wrappers
Instructions:
  • In a small saucepan over medium heat, simmer tomato, stock powder, garlic, and water until sauce thickens, about 10-15 minutes. Stir in cream and rosemary, cook for an additional 3 minutes until heated through.
  • Combine the chicken, shallot, and walnut in a bowl. Season with salt and pepper. Place a wonton wrapper on a work surface. Spoon 1 teaspoon of chicken mixture onto the center. Brush edges with water. Top with another wrapper, seal the edges. Repeat with remaining wrappers and chicken mixture.
  • Boil half the ravioli in a large pot of water for 2-3 minutes until tender. Transfer to a paper towel-lined plate using a slotted spoon to drain and repeat with the rest.
  • Portion the ravioli into individual serving bowls. Drizzle the sauce generously over the ravioli and sprinkle with freshly ground black pepper. Serve promptly.
