Flavorful cheesy baked chicken Romano, perfect for busy weeknights.
Ingredients:
  • 0.75 cup grated Romano cheese
  • 0.25 cup bread crumbs
  • 1 tablespoon granulated garlic
  • 2 teaspoons ground cayenne pepper
  • 2 teaspoons dried thyme
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 6 thin chicken cutlets
  • 1 green bell pepper, diced
  • 6 sun-dried tomatoes
  • 2 cloves garlic, minced
  • salt and ground black pepper to taste
  • 3 ounces shaved Romano cheese
Instructions:
  • Heat the oven to 375 degrees F (190 degrees C).
  • In a shallow bowl, mix together 3/4 cup Romano cheese, bread crumbs, granulated garlic, cayenne pepper, and thyme. Press each chicken cutlet into the flavorful mixture, ensuring it is thoroughly coated, then arrange the coated chicken in a baking dish.
  • Roast chicken in the oven until beautifully golden, approximately 25 minutes, ensuring it reaches a minimum internal temperature of 165°F (74°C) when tested with an instant-read thermometer.
  • In a large skillet over medium heat, warm the oil and sauté bell pepper, sun-dried tomatoes, and minced garlic until soft, about 10 minutes. Season with salt and pepper while stirring occasionally.
  • Place the freshly baked chicken on a plate and generously layer it with a colorful mixture of bell peppers and tomatoes. Finish it off with a sprinkle of delicate shaved Romano cheese for a delightful presentation.
