Delicious chicken avocado salad with fresh veggies tossed in tangy vinaigrette - perfect for any meal!
Ingredients:
  • 4 cups green leafy lettuce, or to taste
  • 1.5 cups thinly sliced cooked chicken breast
  • 1 cup sliced black olives
  • 0.5 cup thinly sliced green bell pepper
  • 0.5 cup thinly sliced red bell pepper
  • 0.25 cup diced red onion
  • 0.33333334326744 cup vegetable oil
  • 0.25 cup red wine vinegar
  • 0.25 cup fresh lemon juice
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.125 teaspoon chopped garlic, or more to taste
  • 1 avocado - peeled, pitted, and thinly sliced
Instructions:
  • In a bowl, mix together lettuce, chicken, black olives, green bell pepper, red bell pepper, and red onion. Cover with plastic wrap and chill in the refrigerator for 30 minutes.
  • Combine oil, red wine vinegar, lemon juice, sugar, salt, pepper, and garlic in a lidded container. Shake vigorously until thoroughly mixed. Chill in the refrigerator for approximately 30 minutes.
  • Incorporate ripe avocado into salad. Shake dressing well and generously drizzle over salad, gently toss to combine.
