Whip up quick Asian chicken and rice parcels in just 20 minutes!
Ingredients:
  • 18.20 gm peanut oil
  • 500g Chicken Mince
  • 2 garlic cloves, crushed
  • 2 tsp freshly grated ginger
  • 48.80 gm oyster sauce
  • 21.00 gm soy sauce
  • 1 celery stick, finely chopped
  • 1 small red onion, thinly sliced
  • 1 spring onion, sliced
  • 1 long red chilli, thinly sliced
  • 250g pkt microwavable jasmine rice
  • 12 baby cos lettuce leaves
  • Spring onion, sliced, extra, to serve
  • Lime wedges, to serve
Instructions:
  • 1. In a large frying pan over high heat, heat the oil. Next, add the mince and cook for 5 minutes, using a wooden spoon to break up lumps until browned. Stir in the garlic, ginger, oyster sauce, and soy sauce, and cook for an additional 2 minutes. Lastly, add the celery, onion, spring onion, and chili, and cook for 2 more minutes until vegetables are tender yet crisp.
  • Heat the rice as instructed on the packet, then incorporate it into the pan and mix thoroughly.
  • Evenly distribute the mince mixture onto lettuce leaves. Garnish generously with extra spring onion. Serve with lime wedges on the side.
