Whip up quick Asian chicken rice parcels in just 20 minutes.
Ingredients:
  • 18.20 gm peanut oil
  • 500g Chicken Mince
  • 2 tsp freshly grated ginger
  • 48.80 gm oyster sauce
  • 21.00 gm soy sauce
  • 1 celery stick, finely chopped
  • 1 small red onion, thinly sliced
  • 1 spring onion, sliced
  • 1 long red chilli, thinly sliced
  • 250g pkt microwavable jasmine rice
  • 12 baby cos lettuce leaves
  • Spring onion, sliced, extra, to serve
  • Lime wedges, to serve
Instructions:
  • 1. Heat oil in a large frying pan over high heat. 2. Add the mince and cook for 5 mins, breaking up lumps with a wooden spoon until browned. 3. Stir in garlic, ginger, oyster sauce, and soy sauce. Cook for 2 mins. 4. Add celery, onion, spring onion, and chilli. Cook for 2 mins until vegetables are tender.
  • While the rice is cooking according to package instructions, incorporate it into the pan and mix thoroughly until fully blended.
  • Divide the flavorful mince mixture among the crisp lettuce leaves. Sprinkle with additional spring onion for extra freshness. Enjoy with zesty lime wedges on the side.
