Versatile chicken stock perfect for soups and stews.
Ingredients:
  • Large (1.6kg) free-range chicken, rinsed
  • 1 large onion, quartered
  • 1 leek (white part only), chopped
  • 3 celery stalks, quartered
  • 2 garlic cloves, bruised with side of a knife
  • 2 bay leaves
  • 1 tsp whole black peppercorns
Instructions:
  • In a stockpot, combine ingredients with 1 tablespoon of sea salt and cover with water. Bring to a boil over medium-high heat with the lid on. Turn the chicken over, then reduce heat to medium-low. Simmer uncovered, skimming off any foam, for 1 1/2 hours until the meat is tender. Remove the chicken and strain the stock through a muslin-lined sieve, discarding solids.
