Chicken Sweet Potato Skillet

Sage-infused chicken with sweet potato, spinach, pear, whiskey, and toasted hazelnuts.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 1 skinless, boneless chicken breast half, cut into cubes
  • 1 large sweet potato, peeled and cut into 1/2-inch pieces
  • 1 tablespoon Irish whiskey
  • 1 tablespoon minced fresh sage
  • 1 pear - peeled, cored, and cut into 1/2-inch pieces
  • 0.5 cup water
  • 2 cups baby spinach
  • 0.25 cup chopped toasted hazelnuts
Instructions:
  • In a skillet, heat olive oil over medium heat. Brown chicken by cooking and stirring in the hot oil for 3 to 5 minutes. Using a slotted spoon, transfer the chicken to a plate.
  • Saute sweet potato in the skillet until lightly browned, then add chicken back in. Pour in whiskey, sage, pear, and water, and mix thoroughly. Simmer on medium-low heat with the skillet partially covered until chicken is cooked through and sweet potato is tender.
  • Uncover and gently scatter spinach over the chicken-sweet potato blend. Cook, stirring occasionally, until spinach wilts, approximately 5 minutes. Add hazelnuts; season with salt and pepper to taste.
